Personally, I like the opaque sets.  I started with orange and black (Go
Beavers!), then I got white.  I'll certainly be picking up the grey set when
it shows up in the Dangling Carrot.  Woot!

When I play Zendo, I just have a house rule that pieces completely obscured
by an opaque pyramid cease to exist (a koan consisting of a small piece
covered by a large black piece is the same koan as a single upright large
black piece, both with a pip count of three).

White, black (and now gray) add a whole new attribute to the
pieces, opacity, but this attribute is somewhat underutilized
in the world of Icehouse gaming.

I don't see all that much difference, really. Go with what
would make you personally happiest.
