David, I often disagree with your posts, but not this time. No, I agree through and through with everything you wrote here.
"Lab Assistant", I'm sorry to say, is FAIL. It's bland. It's unmemorable. It has none of the Looney Labs edginess, interest, or joie de vivre that "Mad Lab Rabbit" did. Of course, the nature of the program matters more than the name, but surely a better name can be found...
And the connotations, such as they are, are wrong. If I met someone who said he or she was a "Looney Labs Lab Assistant", without knowing what that title meant, I'd expect it to mean that that person was a LL employee -- perhaps tech staff or something. I don't think it works for the name of the demo team.
