I'm keeping these in a spreadsheet, and added a few of my own:

Medusa: woman/snake
Minotaur: man/cow
Hermaphrodite: man/woman
Centaur: man/horse
Pegasus: horse/bird
Mermaid: woman/fish
Merman: man/fish
Sea-lion: fish/lion
Griffin: bird/lion
Sea-horse: fish/skeleton (fish/horse? fish/horse/skeleton?)
Faerie: man or woman and (pick your thing with wings)
Incubus: man/thing-with-wings
Succubis: woman/thing-with-wings
Faun/Satyr: man/goat
Harpie/Siren: woman/bird
Manticore/Androsphinx: man/lion
Criosphinx: lion/ram
Hierocosaphinx: bird/lion
